From back garden to bistro

Lockdown is tough on us all, however, many people are using the unlimited time to their advantage. Some are spending more time with the kids, some are becoming baking pros or fitness fanatics and some are even selling pizzas from their garden.

Harriet Corcoran and her friend Katie McDonald were both furloughed from their jobs at the start of lockdown. Harriet was pursuing her dream career as a chef in Strathbungo based Bistro, Gnom. Katie is a successful event and marketing coordinator with a passion for cooking.  

With extra time on their hands, the girls decided to turn their pizza dream into a reality. They started rolling pizzas in the back garden and uploaded pictures of their doughy creations to Instagram. They soon realised their followers would pay good money and that’s when Lazy Susans Pizzeria was born. They began making and selling pizza every Friday and Saturday night on a limited delivery and collection service.

When I asked Harriet why she chose pizza, she said “I have always loved making pizza and sharing it with others. I would often have pizza parties in my flat.”

I think we could all agree with Harriet when she says “to me, it’s just the perfect food. It’s easy, it’s delicious, it’s accessible, it’s versatile and you can get experimental.”

LazySusansPizzeria was a massive hit and the girls were excited to tell me that they have now teamed up with Bar Vini. Harriet said “it suits our vibe, it’s a great location as it’s on the doorstep of the west end, the Southside and central Glasgow. They are a hub for creative cooks, bakers and drinks specialists who are in the limbo between just getting started and being ready to take the plunge.”

It’s great to see two young women taking the brave step into the food industry and following their dream, especially during an unsettling time like this. It’s also great knowing there’s another excellent pizza place out there that we can indulge in to try and forget about the lockdown blues.
